ANA PAULA MORAES
Ana Paula Moraes brings over a decade of hospitality experience and a passion for service to her role as General Manager of two Michelin starred L’Atelier de Joël Robuchon and one Michelin starred Le Jardinier in Miami.
Born in Goiânia, Brazil, Ana Paula holds a degree in Business Administration from Faculdade Araguaia. She began her career in management at Santander Bank before moving to the United States to pursue her love for hospitality. Ana Paula held key roles in the openings of Metropolis by Marcus Samuelsson and led bar programs at Casa Lever and with the Sant Ambroeus Hospitality Group, where she was known for developing standout cocktails and mentoring service teams.
In 2023, she joined The Bastion Collection as Head of Mixology and Bar Manager at Bar Bastion in New York, where she built a critically acclaimed bar program. In 2024, her leadership led to her promotion to Assistant General Manager at Le Jardinier New York. In 2025, Ana became the General Manager of both L’Atelier de Joël Robuchon and one Michelin starred Le Jardinier in Miami.
Fluent in multiple languages and certified in both wine education and TIPS alcohol safety, Ana Paula combines operational expertise with a deep understanding of food and beverage.
